Soft Wheat Quality

Our goal is : (1) To evaluate quality of soft wheat breeding lines and cultivars from 19 State- and 10-15 private- breeding programs to ensure maintenance and/or improvement of milling and baking quality, and (2) To conduct research in the physics and chemistry of
wheat and flour quality and to develop new or improved methods for measuring
and predicting quality. Both missions require close cooperation with breeders
and with the milling and baking industries. We strive to distribute resources
equally between the evaluation and research programs.
